Born in Tokyo. Raised by the world.
For the past decade, I had the privilege of serving as CEO of a ramen group headquartered between Tokyo and Portland, Oregon, helping create places where people gather and share stories through food across Japan, Hong Kong, Singapore, New York, Lisbon, Toronto, Vancouver, Los Angeles, Culver City, Costa Mesa, Houston, and beyond.
Through those experiences, I learned something important.
No matter the culture, language, or tradition, sharing a meal has the power to bring people together.
For my next chapter, I chose Austin.
While our restaurant is located a little outside the city center, I chose Austin because of the special spirit this city possesses.
Austin is a place where growth and opportunity coexist with warmth and community.
People from all over the world come here, bringing different cultures, perspectives, and ideas. Yet despite its growth, Austin has maintained a welcoming character and a strong sense of connection to its local communities.
From the very first visit, I felt this was where my next challenge belonged.
Pebble Onebird was born from one simple idea:
A truly great restaurant should exist naturally within the everyday life of a neighborhood.
Not a place reserved for special occasions, but a place people can visit regularly.
A place that makes people think:
"I'm glad a place like this exists in my neighborhood."

When you're craving a little excitement, we offer fried chicken with a spice level that's just right for you.
On busy mornings, we hope our freshly baked breakfast sandwiches help start your day.
For birthdays, office gatherings, and celebrations, we hope to provide food and moments worth sharing around the table.
Our goal is to be a place that naturally fits into the many moments of everyday life.
Chicken is one of the world's most universal foods—loved across cultures, continents, and generations.
I was born in Japan, but raised by the world.
That is why, here in Austin, I hope to create a place where people from different backgrounds can gather, connect, and share stories through food.
To us, true hospitality means:

Taichi Ishizuki / Founder
Founder Background
Pebble Onebird was founded by Taichi Ishizuki, a Japanese-born restaurateur with more than two decades of international restaurant experience.
Leaving Japan at 19, Ishizuki traveled through Australia and Asia before moving to the United States at 27. Over the past 20 years, he has led more than 30 restaurant projects across North America, Europe, and Asia.
For ten years, he served as CEO of AFURI USA, leading the brand’s international expansion and establishing 22 licensed locations worldwide.
In addition, he co-founded / CEO of Kushi-Katsu Tanaka USA, launching the Japanese brand’s presence in the United States.
In 2025, Ishizuki founded Pebble Moon & Co., the hospitality company behind Pebble Onebird. He also operates Pebble Hiroo Terrace, an all-day brunch restaurant in Tokyo.
