For the past decade, I had the privilege of serving as CEO of a ramen group headquartered between Tokyo and Portland, Oregon, helping create places where people gather and share stories through food across Japan, Hong Kong, Singapore, New York, Lisbon, Toronto, Vancouver, Los Angeles, Culver City, Costa Mesa, Houston, and beyond.
Through those experiences, I learned something important.
No matter the culture, language, or tradition, sharing a meal has the power to bring people together.
For my next chapter, I chose Austin.
While our restaurant is located a little outside the city center, I chose Austin because of the special spirit this city possesses.
Austin is a place where growth and opportunity coexist with warmth and community.
People from all over the world come here, bringing different cultures, perspectives, and ideas. Yet despite its growth, Austin has maintained a welcoming character and a strong sense of connection to its local communities.
From the very first visit, I felt this was where my next challenge belonged.
Pebble Onebird was born from one simple idea:
A truly great restaurant should exist naturally within the everyday life of a neighborhood.
Not a place reserved for special occasions, but a place people can visit regularly.

Our goal is to be a place that naturally fits into the many moments of everyday life.
Chicken is one of the world's most universal foods—loved across cultures, continents, and generations.
I was born in Japan, but raised by the world.
That is why, here in Austin, I hope to create a place where people from different backgrounds can gather, connect, and share stories through food.
To us, true hospitality means:

At Pebble Onebird, every dish begins with one ingredient — chicken — and a deeper way of understanding it.
We treat each part with care and intention. Bones are slowly simmered into rich broth. Breast is gently cooked and served with warmth and clarity. Thigh is grilled, roasted, or fried for bold expression. Offal and eggs are transformed into texture, flavor, and everyday comfort.
Nothing is wasted. Every part has purpose. Every dish tells a story.

Pebble Onebird is shaped by decades of restaurant experience across Japan, the United States, and beyond.
Founded by Japanese restaurateur Taichi Ishizuki, the concept reflects a lifetime spent building restaurants rooted in hospitality, precision, and care. From fine dining to everyday comfort, every detail is guided by the belief that thoughtful food should be part of daily life.
