I left Japan at nineteen hungry to understand how people actually eat — not in restaurants, but in their lives. Twenty years and thirty-plus openings across three continents later, one conviction held: a shared meal crosses every border.
Why Austin
From my first visit, I felt something genuine here — a city still deciding what it wants to be, full of people who care about where they eat and why. That combination of growth and warmth was exactly where a restaurant like this belonged.
